Springtime chicken salad VARIATION: 1lb of boneless chicken breasts can be poached with 1/4 c lemon
juice and water or broth to cover in a 9-in skillet. Place over med heat.
Bring to a boil slowly. Reduce heat. Simmer for 1 min. Remove from heat.
Cover. Let stand 20 mi Warm potato and tuna salad. 1. Cook the potatoes in lightly salted water for about 15 minutes or until
tender.

thick. Add butter and cool. Fold cream into cooled mixture. Combine this
mixture lightly with marshmallows, well drained fruits, and nuts. Chill 24

Egg salad Combine eggs, celery, salad dressing, green pepper and curry powder; mix well. Chill. For each sandwich, spread 1 slice with
salad dressing, cover with lettuce, bologna, egg mixture and other slice of bread. Makes about 4 sandwiches.
Quick spinach salad Wash, dry, and tear spinach leaves into bite-size pieces, discarding stem.
Place spinach in a large salad bowl and add onions. Just before serving,
add Parmesan cheese and salad dressing to taste. Toss and serve.
Italian potato salad 1. Scrub potatoes; cut crosswise into 1/4 in. slices. Place in 1 1/2 qt.
microwave safe casserole. Add water and salt. COver with lid. Microwave on
high for 9-10 min. or until potatoes are tender; stirring once. Drain and
cool.
2. Add onion Blueberry cream salad Dissolve gelatin in boiling water. Set aside to cool. Stir in pie
filling and lemon juice. Chill till partially set. Spoon half the gelatin
mixture into an 8+1/2 by 4+1/2 by 2+1/2-inch loaf dish. Chill till set.
(Keep remaining gelatin at room temperat Tomato and mozzarella salad On a bed of lettuce, arrange tomatoes, cheese, onion, if using, and
basil. Mix all dressing ingredients together and pour on top. Garnish
with sprigs of parsley, if desired.

sugar, salt and pepper. Fry bacon until golden brown. Dice it and add
to the lettuce. Into 2 Tb hot bacon fat, add the vinegar and water
and bring to a boil. Pour over lettuce, Brown rice and vegetable salad #2 Toss all of the salad ingredients together. Mix the dressing ingredients first, and then add to the salad. Toss to mix. Best served chilled, but was actually pretty good warm. Very colorful, and would probably make a great main dish for folks who limit |
