and grind or chop fine. Heat fat and half the butter (2 tablespoons) in a
heavy casserole. Saute the pork and gizzards over high heat until browned.

pan. Pour the oil into a deep 12 inch frying pan and heat over medium
high.
Oil should be 375 degrees.
Rinse chicken Pizza tuna melt Preheat over to 450 degrees. Place four pits on a large baking sheet.
Dizzle 1/2 ts olive oil over each pita, then cover with 1/4 can of the tuna
in oil. Put mozzarella cheese of each bread. Put a tomato slice on each
bread. Sprinkle 1/2 ts Chicken enchiladas cajun style Combine all ingredients, except cheese. Mix and
place half in casserole. Cover with cheese. Repeat
layers. Bake 1 hr. at 350 F . This freezes well and

Cajun potato salad Cook the potatoes in boiling salted water for 20-30 minutes or until
tender; drain. Rinse with cold water; cool completely. Cut into 1/4"
slices; place in a large bowl. Add onions, parsley and 3 tbs. vinegar;
toss.
In a medium skillet, Cajun red beans & rice Rinse beans & drain well. Cook in 5 cups of water for 50 minutes or until
tender, with the bay leaves.
Add onion, thyme, garlic, parsley, green pepper & salt to pot, simmer over
medium low heat for 15 to 20 minutes. Add miso & sim Chop suey with tuna Cook celery and onion in 2 tb water over low heat, covered. When
tender, remove from heat, add rice, 2 c water, and seasonings. Bring
to a boil. Turn heat to low and cook covered, until rice is tender
and liquid absorbed (about 1/2 hour). Add tun Cajun chicken pasta 1. Cook pasta
2. Meanwhile, coat chicken with cajun seasoning.
3. Saute chicken 5-7 minutes.
4. Add veggies and cook 2-3 minutes.
5. Reduce heat and add cream, seasonings, and cheese.
6. Cook until hot, then mix with pasta.
Tuna and potato salad Blanch the defrosted green beans for 2 minutes in boiling water.
Drain and plunge in cold water. Drain.
Place the cooked potatoes, beans and tuna in a salad bowl. Mix the
anchovies and pesto with the mayonnaise and pour onto the salad. Add
White bean and tuna spread In a small skillet heat the oil, add the onion, and saute, stirring frequently, until soft, about 5 minutes. Stir in the garlic and sage, cook for 1 minute. Transfer to a food processor, add the white beans, lemon juice, tuna, and seasonings. Process unti Marinated tuna steaks Combine all ingredients in a plastic bag. Marinate in the fridge for atleast one half hour. Grill for approximately 8 minutes per side.
Basic grilled tuna steaks Rub the steaks with oil and squeeze half juice on top. Grill for app. 8 minutes on each side and transfer to plate. Squeeze the rest of the juice on top. Serve plain, with melted butter, or garlic mayo if you'd like.
Tuna with sundried tomato sauce Place sun-dried tomatoes in the food processor.
Boil white wine, vinegar, peppercorns and bay leaf in heavy small saucepan
until liquid is reduced to 3 T, about 8 minutes. Strain liquid into
tomatoes in processor and puree until smooth. Return tomato mi Ginger-lime tuna steaks Prepare Ginger-Lime Marinade. If fish steaks are large, cut into 6 serving pieces. Place in shallow nonmetal dish or heavy-duty resealable plastic bag. Add marinade; turn fish to coat with marinade. Cut ribs into serving-size pieces. Combine seasonings together well and rub on all surfaces of ribs. Place ribs on covered grill over indirect heat and cook, turning every 15 minutes, for 1 1/2 hours.

Spice Cajun turkey rub Stir salt, herbs and peppers together. Mix until well blended. May be stored for several months in an airtight covered jar.
Justin's tuna salad Combine eggs and dill relish. Add the rest of the ingredients,
except tuna, and mix really well. Then add tuna. If the mixture
is dry, add some more mayonnaise.
This is fine for a sandwich.

From Ju Cajun coleslaw Put mayonnaise and mustard in a bowl large enough to hold complete mixture, but shaped so that the mixture can be beaten with a fork. Beat mayonnaise and mustard until combined. Add olive oil slowly,
