Directions: Cut the vegetables into bite-size pieces. Place vegetables in a large, 6
quart pot and add enough cold water to cover.
Boil for 10 minutes, uncovered, then cover the pot and simmer over low heat
until all the vegetables are soft. This will take about one hour.
While the soup is simmering, cook 1 1/2 cup of brown rice according to
package directions. Add cooked rice to soup when the soup is almost
finished. Add salt and pepper to taste when the soup is fully cooked.

a stew. Mushroom and barley soup (shulman) Saute the onion in the fat until translucent. Add mushrooms and garlic, stirring, for 2 minutes. Add the wine and thyme, saute another 3 minutes. Add barley, stir and saute another 3 min. Add the soy flakes and the broth, bring to a full boil and reduce Almond broccoli soup Heat oil in 3-quart saucepan over medium heat. Add onion and garlic. Saute
until onion is transparent and golden, about 10 minutes. Add broccoli,
water and broths. Bring to simmering and cook just until broccoli is
tender, about 10 minutes. Add Beer soup with cheese Cook and stir onion in margarine in 2-quart saucepan until tender. Stir in beer, carrot and celery. Heat to boiling; reduce heat.
Cover and simmer 10 minutes. Stir in remaining ingredients except sour cream and cheese. Heat to boiling; reduce heat.
Cov Hearty split-pea soup Heat leftover ham, peas, carrots, onion and 7 cups of water in dutch oven.
Heat to boiling then reduce heat and simmer for 3-4 hours or until peas are
soft. Remove bay leaf and serve. Makes 10 1-cup servings.
Minestrone veggie soup Add some cooked pasta, a little dried basil and top with a fresh grating of Parmesan cheese.
White bean and collard green soup ABOUT THE BEANS: Use any kind of white beans: the smaller navy beans, the medium-sized Great Northern, or the large cannelini. If you're using canned beans, use 2 cans.
ABOUT THE GREENS: The recipe calls for collard greens, but you can also use escar Scandinavian rasberry soup * Raspberries should be the frozen in syrup kind and be thawed.
** You can use other dry white wines in this soup, but just white wines
*** Garnishes to include Raspberries, Orange Rind Twists or Mint Leaves.

Add ingredients and cook over medium to low heat about 15 minutes.
Stir often. Cover pan during the last 5 minutes of cooking time. Stir
