Ingredients: 1 head cabbage 6 carrots 6 onions 6 green onion 2 green or red peppers 1 28 oz can diced tomatoes 5 stalks celery 1 1/2 Cup(s) brown rice; uncooked 1 salt and pepper |
Directions: Cut the vegetables into bite-size pieces. Place vegetables in a large, 6
quart pot and add enough cold water to cover.
Boil for 10 minutes, uncovered, then cover the pot and simmer over low heat
until all the vegetables are soft. This will take about one hour.
While the soup is simmering, cook 1 1/2 cup of brown rice according to
package directions. Add cooked rice to soup when the soup is almost
finished. Add salt and pepper to taste when the soup is fully cooked.
