powder and lemongrass to coconut milk, and slowly bring to a boil
while stirring gently. Simmer for 10 minutes. Strain off lemongrass.

wilted. Add hot water, cover and cook. Add rinsed bean sprouts, and stir.

White and green bean salad with tomatoes and basil In a deep pot, cover beas with 6-8 cups cold water. Add the thyme-salt.
Bring to a boil over high heat. Reduce the heat to a gentle simmer,
skimming away any foam. Cover and cook until the beans are tender, about
90 minutes. Let cool in broth.
In a la Hutchinson beef tongue with raisin sauce DIRECTIONS FOR BEEF TONGUE:
1. Place all ingredients into a kettle; add just enough boiling water to cover tongue.
2. Cover and simmer about 3 hours, or until tongue is tender.

Asparagus with lemon grass & shallot vinaigrette Peel the asparagus if necessary and cook the stalks in lightly salted
water for 4 to 8 minutes, depending on the thickness, or until fork
tender but still firm. Drain under cold water and set the stalks aside

Soak 1 pound navy beans overnight. Cook beans, prunes, beef and
vegetables separately. Do not drain. Mix all together and simmer
until the flavors are mixed.
Barbecued beef sandwiches This may be cooked a day ahead and refridgerated overnight. Skim fat off
top and reheat.
Place beef in slow-cooker. Combine remaining ingredients, except rolls.
Pour over meat. Cover and cook on LOW 8-9 hours. Refridgerate or prepare
sandwiche Italian asparagus Lay asparagus spears in shallow baking dish coated with vegetable cooking spray. Blend Tomato Sauce, water, oregano, garlic powder, salt, and pepper. Bake at 350F for 25 to 30 minutes.
Microwave: Cook on High for 5-6 minutes.
Cold asparagus with sesame-ginger vinaigrette *To toast sesame seeds, put them in a small skillet and heat, stirring
frequently, until fragrant and just golden. Watch carefully.
