Directions: Combine first 6 ingredients in a large bowl, stir well. Stir in dried cranberries. Add buttermilk, molasses, and 1/3 cup maple syrup to dry ingredients, stirring just until moistened.
Pour batter into a 13-ounce coffee can heavily coated with cooking spray. Cover with aluminum foil, secure foil with a rubber band.
Place can on a shallow rack in a large, deep stockpot, add enough water to pot to come halfway up sides of can, and bring to a boil. Cover pot, and steam bread in boiling water for 2 hours, adding boiling water as needed.
Remove can from water, let bread cool in can on a wire rack for 10 minutes.Remove bread from can.
Combine Neufchatel cheese and remaining maple syrup, beat well with a mixer. Yield: 9 servings (serving size: 1 slice bread and 1 tablespoon maple cream cheese).
NOTES : Cut bread crosswise into 9 slices, and serve with maple cream cheese.

[A new favorite of Cheshire Cat!] The wheat flour gives this bread
body, the nuts and carrots give it texture, and the yogurt keeps it
moist. Serve this bread with steaming bowls of vegatable soup for a

Canadian maple cream pie 1. In a large bowl whisk cream, maple syrup, egg, lemon juice and salt together.
2. In a small bowl stir sugar with flour until well mixed; shisk into cream mixture so that no lumps remain.
3. Place pie shell on a baking sheet, pour in filling and bake at 100% whole wheat bread 4 Dissolve yeast in 2/3 c water while your milk is cooling. Dissolve 1 cup
sugar in the hot milk. Stir all ingredients in large bowl, turn out and
knead about 5 minutes, adding flour if needed. Knead about 5 minutes.

NOTES : This bread is supposed to be the closet thing to Wonder Bread.
Crab and cream cheese hors d'oeuvre Blend together all ingredients except almonds and put in shallow baking
dish (salt/pepper to taste). Sprinkle almonds over top and bake at 350
degrees until slightly browned on top. Serve hot on crackers. Makes 2
cups.

Chicken and pork are often baked or braised in maple syrup in the Beauce.
This easy recipe for chicken breasts can also be used with a whole cut-up
broiler-fryer chicken. It's from the collection o Bruschetta (garlic bread with tomatoes and basil) In a large skillet, heat the olive oil and 1 tablespoon of the garlic over
