Broiled rosemary-garlic pork tenderloins with apricot-mustar 2 tb Olive oil
2 x Pork tenderloins
1/2 c Grainy brown mustard
1/3 c Apricot jam
1/4 c Port
1. Heat broiler. Combine garlic, rosemary, salt, pepper and olive oil in small bowl, mix well. Rub tenderloins with mixture.
2. Place tend Broiled swordfish mirabeau Roll the steaks in olive oil and broil seven minutes on each side. Season
with salt and freshly-ground pepper while the fish is cooking. Mix butter
and anchovy paste and spread on the hot steaks as they come from the
broiler. Serve with a slice of Pasta with roasted red pepper tomato sau In a large skillet over medium heat, heat oil; add onion and garlic. Cook 5 minutes or until tender stirring fequently. Add tomatoes, red pepper, broth and seasonings. Heat to boiling; reduce heat. Simmer 10 minutes, uncovered. Meanwhile, cook pasta Quick tartar sauce for chicken or fish * Use only real mayonnaise.
In a small bowl, combine all the ingredients. Cover tightly and chill.
Serving Ideas : Serve with fish or cold baked chicken.

Cod poached in tomato-saffron broth Heat oil in 10 inch straight sided skillet over medium high heat; cook
onion 5 minutes or until softened. Add garlic and next 4 ingredients;
cook, covered, over medium heat 10 minutes. Stir in salt and pepper. Add
cod to skillet; reduce heat until wine Broiled salmon fillets with fennel sauce 1. Preheat the broiler. 2. Carefully inspect the fish to determine if
any bones remain. Using a pair of pliers, carefully pull away and
discard the bones. Cut the fillets into 4 equal portins, either
rectangular or square in shape. Sprinkle wit Wild garlic wrapped mackerel fillets with red pepper marmalade 1 The marmalade can be made in advance and reheated. Melt the oil and butter in a heavy pan over a low heat. Add the peppers, onion, star anise and chilli.
2 Stir to coat lightly in fat, cover and leave to sweat for 25 minutes, stirring once or twice unt Hot tomato sauce Heat the olive oil in a large saucepan. Add the garlic and gingerroot
and cook briefly then add the onion and cook until soft. Add the

Sift together flour and salt. Make a soft dough by using water.
Make into equal size balls. Roll to flatten on a floured board.
Heat a nonstick pan (no oil). Cook 2 minutes.
Chutney:
Cook tomatoes and water for 5 minutes on high heat, stirring.
Broiled steak * Each flank steak should weigh between 1 and 1 1/2 lbs. Place beef
steaks in shallow glass or plastic dish. Mix remaining ingredients
and pour over the beef. Cover and refrigerate at least 8 hours,
turning occasionally. Set oven control Broccoli and sun-dried tomato fusilli Cook pasta, rinse, oil.
Heat olive oil in a large skillet. Add salt and garlic until just
browning. Add thyme and sundried tomatoes. Toss and add broccoli. When

Dried tomato torta In a large bowl, beat cream cheese, butter, and Parmesan cheese with an
electric mixer until smoothly blended; set aside.
Cut 4 of the tomatoes into thin strips; cover and refrigerate. In a
blender or food processor, whirl remaining tomatoes, 2 ta Alfredos bbq fish marinate Marinate fish for at least one hour before cooking. Serves 30.
Dried tomato and rosemary bread 2/3 cup water 2 Tbls. snipped unsalted dried tomatoes (do not use oil pack)
1 Tbls. olive or vegetable oil 3/4 tsp. salt 2 cups bread flour 3 Tbls.
nonfat dry milk powder 2 tsp. sugar 1/2 tsp. rosemary, crushed 1/2 tsp.
paprika 1 1/2 tsp. bread Alfredo's bbq fish marinade Mix all the above ingredients in deep dish. Marinate fish for one hour
before grilling.
Tastes very good on fresh Mahi Mahi or Ahi Tuna. Depending on your
preference you can cut back on the salt. I prefer to cut back on the salt
by at least half Cashew fish Put the cashew pieces into a blender or food processor and grind them up into a cashew flour. Mix the cashew flour with the paprika and place on a pie plate or serving platter. Place the beaten egg on another plate. Salt and pepper the fish. bread crumbs. Broil about 4 minutes on each side or until fish flakes. In

Turkey fillets with pine nuts, capers and raisins Pat the turkey fillets dry with paper towels. Sprinkle with salt and

You will probably need to sear the turkey in batches so that it will
brown. Heat a large, nonstick skillet over medium high heat. Spray

minutes; uncover last few minutes and allow to simmer until sauce is
thick.
Meanwhile, wash and tip fresh green beans (allow frozen beans to
defrost partially). Arrange bean African fish curry powder Curry powders are an important part of African cooking due to the heavy
influence of Arabic and Indian cuisine in Africa. Curry powders are made
from different proportions of spices, dried and ground. Spices can be dried
in the sun for two to thre Chili and fennel mop for fish In a mortar, combine chili, fennel, peppercorns, salt and garlic and grind
until a paste is formed. Slowly incorporate oil and lemon juice; mix well.
Mop fish all over, inside and out.

set aside. In a medium to large frypan, heat 2 tablespoons oil over
moderate heat. Add potatoes and saute, turning frequently, until potatoes

Combine all ingredients, except halibut, in a bowl and mix well.
Sprinkle about 1/2 tsp. spice mixture over each halibut steak. Broil 10
minutes per inch of thickness or until fish flakes when tested with a fork.

MArinate swordfish in the mixture for 1 hour in refrigerator, turning
occasionally. Remove from marinade and scrape off any ginger or garlic that
may cling. Strain marinade, r Fish chowder Place fish in a stockpot and add water to cover. Bring to boil. Simmer 5 min. or until fish is cooked through. In separate saucepan, combine potatoes with cold water to cover them. Bring to boil, lower the heat, cover pan, simmer potatoes for 12 min. Broiled north sea black cod Cut fish into serving-size pieces. Combine remaining ingredients in a glass
baking dish. Add fish, turning to coat both sides. Cover and refrigerate,
turning once, for 4-6 hours.
Place fish on a rack in a foil-lined baking pan. Broil 4-6" fro Broiled potato skins Prick Potatoes with fork to allow steam to escape. Bake potatoes in 425F oven until tender, about 1 hour. Cool slightly. Cut each potatoe lengthwise into halves, scoop out insides, leaving a 3/8 inch shell. heavy medium saucepan. Bring to boil. Reduce heat, cover and simmer
until lentils are just tender, about 25 minutes. Drain; transfer to

Mix all remaining Summer fish salad Mix fish and vegetables in bowl. Set aside. In small bowl, combine oil, vinegar and salt, pepper, oregano, and garlic powder to taste. Toss well with fish mixture. Chill at least 2 hours before serving, mixing well before doing so.
