Shell and de-vein or clean shrimp, then rinse. Combine oil, salt, pepper,
parsley and tarragon in a small bowl. Dip shrimp in the mixture to coat
well. Lay shrimp on a shallow metal baking dish.
Pre-heat broiler. Slip shrimp under a hot broiler to cook for approximately
3-minutes on each side, or until the transparent nature is replaced by
opulent white meat. Place shrimp on a warmed serving platter.
Heat butter and lemon juice in a small saucepan while shrimp are broiling.
Add the oil mixture leftover from dipping the shrimp to the lemon butter
sauce. Heat well and pour over shrimp. Serve with rice and garnish with
lemon wedges and, or fresh parsley.
