Directions: 1. Scrub potato and pierce with a fork on both sides.
2. Microwave on high for 5 minutes, turn once, and microwave for another 2-3 minutes, or until cooked through (all microwaves are different, so monitor closely.)
2a. If baking in oven, bake for about 40 minutes at 350 degrees.
3. Let cool until you can handle.
4. Microwave broccoli about 5 minutes or until tender: drain.
5. Slice potato lengthwise, scoop out inside of baked potato and combine with broccoli and cheese; stuff back into potato.
6. Heat in microwave for 30-45 seconds more, to melt cheese, and serve.

Cuban potato salad with scallion vinaigrette Bring a pot of salted water to a boil and cook the potatoes until tender,
about 10 minutes. Set aside. When cool, transfer to a large bowl and
combine with black beans. In a blender combine the scallions, sour cream
and lemon juice. Pulse a few time Diabetic herb potato salad Scrub potatoes & cube. Place in medium saucepan and cover with water. Bring
to a boil. Cover, reduce heat and simmer 12 minutes or until potatoes are
done. Drain. Mix dressing ingredients and combine hot potatoes, dressing
and radishes. Serve Creamed chicken & potato Melt butter in small heavy pan over low heat. Stir in flour and blend well. Add milk and stir until smooth.
Cook over low heat until mixture begins to thicken, then add chicken and potatoes and stir for about 2 to 3 minutes more or until heated through. Ham and cheese ball Soften cheese to room temperature. Sprinkle some of the onion powder over
thinly sliced ham, and set aside. Mix cheese and remainder of onion
powder. Chop ham finely, put nuts in blender. Cover cheese ball with nuts
