Directions: Preheat over to 350 degrees
In a small shallow dish combine the stuffing mix, cheese, parsley, curry powder, and seasoning. Mix together.
In a small bowl, melt the butter in the microwave. Dip the chicken breasts in the stuffing mixture, coating both sides of each breast.
Place chicken in baking dish and sprinkle any leftover stuffing mixture over the chicken. Bake in over for 10-15 minutes, then turn the chicken over and bake another 10-15 minutes, or until chicken in cooked thoroughly. Sprinkle mozzarella cheese on chicken and let melt for one minute.
