Ingredients:
1 Cup(s) All-purpose flour 1/2 ts Baking soda
3/4 Cup(s) Whole wheat flour 1/2 ts Salt
1/2 Cup(s) Shreds of wheat bran cereal 3/4 c Unsweetened orange juice
1/3 Cup(s) Brown sugar or brown sugar 1 Egg substitute to equal 1/3 c 1 tb Vegetable oil brown sugar
2 Teaspoon(s) Baking powder Vegetable cooking spray
Directions: Combine flours, cereal, brown sugar substitute, baking powder, soda, and salt in a medium bowl, stirring until well combined. Set aside. Combine orange juice, egg, and oil in a large bowl; beat at medium speed of an electric mixer until well blended. Gradually add flour mixture, stirring just until moistened. Gently fold in blueberries. Spoon batter into an 8 1/2 x 4 1/2 x 3 inch loaf pan coated with cooking spray. Bake at 350øF. for 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and cool completely on a wire rack. Makes 1 loaf (16 slices).
