Directions: In 2-quart saucepan over medium heat, cook potatoes, covered, in 2
inches boiling water until tender, about 12 minutes; drain.
Meanwhile, in large bowl whisk together vinegar, oil, water and
pepper. Mix in apples. In large nonstick skillet over medium heat,
toss and brown sausage 10 minutes. Remove with slotted spoon. Drain
on paper towels. Add potatoes, sauerkraut, onions, parsley and
sausage to apple mixture; toss gently. Season with salt.

frequently and break up meat as it cooks; drain fat. Reduce heat to
low; add Chili Makin's; stir well to mix and simmer for 3-5 minutes.

Avocado salad Spread the pine nuts on a baking sheet and broil for 2 minutes.
Put the salad greens into a large salad bowl. peel the oranges, removing
rind and pith, and separate into sections.
Halve, pit, and peel he avocados. Slice lengthwise and mix with the Seven-layer salad Place salad greens in large glass bowl. Layer celery, radishes, onion,
bacon, and peas on salad greens. Spread mayonnaise over peas,
covering top completely and sealing to edge of bowl. Sprinkle with
cheese. Cover and refrigerate at least 2 hou Wilted lettuce salad #2 Put lettuce and onions in salad bowl. Fry bacon crisp and cool on paper towel. Cool bacon grease slightly, add sugar, vinegar, water, salt, and mustard. Pour over lettuce and onion. Sprinkle bacon on top and serve immediately.
Serves: 6
Sweet chopped salad (serve with grilled chicken or fish) Make dressing: Pure dressing ingredients in a blender.
Assemble salad: Just before serving, toss together salad ingredients,
dressing, and salt and pepper to taste.

Black bean stew Prepare the rice in the water according to package directions or your own
procedure (white rice is OK, but it makes for a bland and fairly gummy
dish).
While the rice is cooking, combine all the rest of the ingredients except
the cheese in a Chicken caesar salad thirds. In a 10 inch skillet melt butter until sizzling. Add chicken,
garlic, salt and 1/4 teaspoon pepper. Cook over medium heat, turning
once, until chicken is browned and fork tender ( 7 to 10 minutes ).
Meanwhile, in a small bowl stir together Vegetable cottage cheese salad Completely dissolve gelatin in boiling water. Add cold water and
vinegar. Measure 1 cup gelatin mixture; divide evenly among 3 individual
plastic containers (for brown bagging) or serving dishes. Chill until set
but not firm. Add remainin Sweet potato gauffrettes with duck confit and cranberry blac Heat the oil in the fryer to 300F .
Using a mandoline adjusted to the zigzag blade, cut the potato into 1/8
thick slices creating the waffle pattern by turning the potato 1/4 turns.
Place 6-8 chips at a time into the oil and fry until crisp. Transfer to

: (inside back cover) Submitted By A4G Spicy sweet potato casserole Mash sweet potatoes and blend ingredients one at a time. Then beat mixture until smooth and fluffy. Spoon into a casserole dish and bake in 350 degree F. oven 40-45 minutes, uncovered. Should be lightly browned on top.
Baked potato wedges Preheat oven to 400F .
Cut each potato into 6-8 wedges. Toss with olive oil and salt and pepper.
Bake 35 minutes.
variation:
2 T creole seasoning
OR
4 tsp chili powder
1 1/2 tsp cumin, ground
2 tsp paprika
1 tsp salt
1 black pepper to taste

1/2 teaspo Whipped mashed potato with goat's cheese and bacon 1 Cook the potatoes in boiling salted water, drain and return to the pan on a low heat. Mash to a puree. Heat the butter in a frying pan, add the bacon, garlic and chives, and cook with the bacon till crisp.
2 Add the olive oil and goat's cheese to t Turkey-black bean chili Heat oil in large pan. Add turkey, onions, and garlic; cook and stir 3
minutes. Add chili powder, cumin, oregano and salt; cook and stir until
turkey is cooked through and onion is tender. Stir in beans and broth.
Combine picante sauce and cornstarch; Shrimp salad wraps 1. Quarter cucumber lengthwise and cut julienne into 2 inch strips, slice green onion lengthwise into 2 inch slivers, cut carrots julienne into 2 inch strips.
2. Combine rice with 1 1/2 cups of water, 1 tbsp. of rice vinegar, and salt in medium saucepan.
New potato salad (satterly) In a medium pot, cook quartered potatoes in salted water till tender.
Meanwhile, combine remaining ingredients in a small bowl. Drain potatoes,
add to the bowl & toss gently. Serve warm or at room temperature or cold.
