Directions: Beat butter and sugar together until creamy. Beat in eggs and vanilla. Add flour, baking powder, and orange peel. Mix well. Stir in cranberries and apricots. Divide dough in half, form each into a 7 x 2 inch log. Lightly spray cookie sheet with non stick spray. Place logs on cookie sheet about 4 inches apart. Sprinkle with chopped pecans if desired. Bake 30 minutes. Remove pan to cool on cooling rack for 15 minutes. Carefully remove logs to cutting board and cut logs diagonally into 1/2 inch thick slices. Arrange slices, cut side down, about 1 inch apart on cookie sheet. Bake 20 to 25 minutes or until dry and crisp. Cook completely on cooling rack. Store in tightly covered container.

Directions:

Pork loin with cranberry apple stuffing 1. Butterfly and pound the roast to 3/4 inch thick.
2. Soak cranberries in 1/2 cup boiling water. Drain after 15 minutes and squeeze out extra liquid.
3. Prepare stuffing according to directions.
4. Saute the onions in 2 Tbsp oil until translucent (a Apple and cranberry butter occasionally for the first hour or so, covered. Then remove cover and turn
down to low and stir occasionally. This is a slow process since you have
NOT precooked the apples. Will take 36 or MORE hours. You may have to use
MORE or LESS of the juic Cranberry salad #1 Dissolve jello in hot water, add sugar, juices and pineapple syrup.
Chill until partially set, add other ingredients and pour into a lightly
greased mold.
Top with mayonnaise if desired.

mixing bowl, stir together olive oil, sugar, salt, cinnamon and cayenne.
