Directions: Select a large, heavy saucepan. Melt the butter over medium heat, and stir in the flour. After removing the pan from the stove, add the milk and cream. Beat swiftly with a wire whisk until the flour mostly dissolves. Put the pan back on the heat and keep stirring until the besciamella comes to a boil and thickens slightly. Reduce the heat and simmer (keep stirring) for three minutes. Take the pan off the burner and stir in the nutmeg and salt.

The 20 lbs of chicken should be cut up in 2-inch-long pieces.
Justin likes more wine in this sauce than some peoples. If you
don't wish to use all 8 Cups of Chablis in the sauce, feel free
to drink w Pork tenderloin with bourbon sauce - chi-chi's Combine all marinade ingredients in recloseable plastic food bag. Mix
well. Add the pork tenderloin. Seal bag and turn several times to coat
the meat. Place in refrigerator for 8 hours or overnight, turning
occasionally.
Preheat broiler. Fresh asparagus with lemon butter sauce Select fresh asparagus for crispness and young tender pencil sized stalks
are ideal. Wash asparagus under cold running water. Snap off the lower end
of each stalk with your fingers. Let the stalk break where it wants to.

Barbecue sauce 2 Combine the seasoning mix ingredients in a small bowl and set aside.
In a 2-quart saucepan fry the bacon over high heat until crisp. Stir
in the onions, cover pan, and continue cooking until onions are dark

2. Cook linguini according to package directions and drain.
3. In a saute pan melt the butter or margarine with the garlic. Quick tomato sauce Cook onions in bouillon until soft. Add remaining ingredients.
Bring to boil, cover, simmer 30 to 45 min. Makes 3 1/2 cups. Cal: 10
per 1/2 c. Fat: trace.
Border sauce Dissolve cornstarch in water in a medium saucepan.
Add remaining ingredients and stir well. Bring mixture to a boil over medium heat, then reduce heat and simmer for 5 minutes. Store in refrigerator; makes 3 cups.
Mushroom sauce Coat a frypan lightly with oil or butter. Add mushrooms; stir-cook 2-3 minutes until mushrooms look a bit dry. Add broth and pepper. Bring to a boil, reduce heat and simmer 5 minutes. Stir flour and cornstarch into water to form a smooth paste or shake to Whisky sauce #2 Whisk egg yolks, crŠme fraîche, butter, whisky, fish stock over low heat in pan.
Whisk until sauce is thick enough to coat spoon back, about 5 minutes.
(Note: sauce will curdle if it gets too hot.)
Take from heat, season with salt and cayenne pepper.

beating as you do so. Now add the salt and mix it in. Add the cold water,
a little bit at a time, beating in Broiled steak with red butter sauce (steak grille au beurre rouge) 1. Preheat the broiler to high.
2. Rub the steak on both sides with the oil.
3. Sprinkle the steak with salt and pepper, using generous amounts of pepper.
4. Place the steak on the broiler rack and let it cook 4-5 min. from the source of heat. Broil 3-5 m Black jack barbecue sauce Combine all ingredients in a saucepan and simmer 25 minutes. Strain
or puree in a blender or food processor. Refridgerate between uses.

Reduce with some of the broth to pouring consistency, to avoid lumping, and gradually stir into hot broth. Stir 5 minutes, Hot spaghetti sauce Heat oil in a large saucpan set over medium heat. Add ground chicken or
turkey to pan along with onions. Stir frequently with a fork until meat
loses most of its pink color. Add Tomato sauce and white wine. Simmer or
5 minutes.
Add remaining ingredient Caper butter sauce Serve with fish, chicken or vegetables. In skillet melt butter; add capers,
lemon juice and salt.
