Ingredients: 1 1/2 Pound(s) ground beef 4 Tablespoon(s) olive oil 1 Cup(s) onion,chopped 1 garlic, minced 1/2 Cup(s) green pepper,chopped 1 Can(s) tomatoes 1 Can(s) whole kernel corn 1 salt 1 1/2 Teaspoon(s) chili powder 1/4 Teaspoon(s) pepper 1/2 Cup(s) yellow corn meal 1 Cup(s) pitted whole black olives 1 1/2 Cup(s) milk 2 Tablespoon(s) butter or margarine 1 Cup(s) cheddar cheese,grated 2 eggs,slightly beaten |
Directions: Brown beef in the oil in skillet. Add the next 3 ingredients and cook 2 to 3 minutes. Stir in tomatoes, corn and seasonings and simmer about 5 minutes. Mix cornmeal and 1 cup water. Stir into first mixture, cover and cook slowly about 10 minutes. Add olives and pour into shallow 2-1/2 quart baking dish. Pour topping around edge of dish and bake in moderate 350 oven about 20 minutes.
Topping:
Heat milk, salt and butter in a heavy saucepan. Gradually stir in cornmeal and cook, stirring, until thickened. Remove from heat and stir in grated cheese. Then stir in slightly beaten eggs.
