2 strips beef, steak
1/4 any color pepper, green
1/4 small onion, yellow
1/2 shredded cheese, cheddar
1/4 chili powder
1 sour cream
1/2 oil, olive
1/2 medium tomato, fresh
1 tortilla
Directions: 1. Slice beef, pepper and onion into strips. 2. In a nonstick skillet, heat oil on medium and stir-fry beef until slightly golden, about 6 minutes. 3. Increase heat to medium-high and add pepper, onion and chili powder to skillet. 4. Continue to cook, stirring frequently until vegetables are tender but still firm, about another 2-3 minutes. 5. Rinse and chop tomato; add to beef mixture. 6. Spread mixture over tortilla(s), sprinkle with cheese, top with sour cream and serve.
