Waldorf salad is traditionally a mix of coarsely chopped nuts, apples,
celery, and raisins combined with mayonnaise. For a change, substitute
fresh chunks o Asparagus and mushrooms with black bean sauce Cut asparagus on the diagonal into 1-2 inch pieces. Blanch for 5 minutes in boiling water. Drain and set aside. Wash and slice mushrooms. Set aside. Mince the garlic. Rinse the black beans well. Mix garlic and beans together. Set aside. Mix together the r Smoked cheese Place cheese in small shallow baking dish. Smoke 8-10 minutes for soft cheeses, 12-15 for firm. Cheese should be very sort, almost melted.
Baked chicken salad Heat oven to 375F. Grease a 2-quart casserole. Put chicken and celery into casserole. Blender - chop nuts and add to chicken. Put 2 cups of potato chips into blender container, cover and process 4 cycles at (stir). Empty onto wax paper and set aside. "cheese" sauce Blend the potato with 1/4 to 1/3 cups of the water in a blender. Add the
remaining ingredients and blend until smooth. Pour into a saucepan. Cook,
stirring, until smooth and thick, 7 to 8 minutes.
Serve at once. The sauce will set when cool an Tomato and mozzarella salad On a bed of lettuce, arrange tomatoes, cheese, onion, if using, and
basil. Mix all dressing ingredients together and pour on top. Garnish
with sprigs of parsley, if desired.
Robb's red potato and green bean salad To prepare dressing, in blender container combine herb vinegar, olive
oil, vegetable oil, granulated sugar, paprika, salt, garlic, dry
mustard, caraway seeds, and celery seeds. Blend until well
emulsified.
Cut green beans on the diagonal in Grape and cabbage salad Combine grapes, cabbage, salt, black pepper, lemon juice, and mayonnaise.
Toss lightly. Serve on lettuce leaves. Garnish with additional whole
fresh grapes, if desired.

very soft (about 50 to 60 minutes). Drain and cool. Add cubed pita
bread and green onion; combine well. Serve with fresh lemon juice
and additional olive oil to taste.

Combine sauce ingredients in saucepan, bring to rolling boil. Reduce heat, simmer until sauce is consistency of maple syrup, about 20 minutes. Remove from heat and cool.
