Asparagus & chicken in black bean sauce Marinating: With sharp paring knife, scrape chicken meat from thigh; slice
into thin strips across the grain. (Breast meat is not preferred for this
dish, as meat is too dry and spongy.) Combine sherry, soy, cornstarch and

smooth. Transfer to a bowl; stir in dill. Season with salt and pepper.
Serve immediately, or store, covered in refrigerator up to 1 week.
Serve with pita chips and your favorite olives Cuban black bean and rice salad In a large mixing bowl, combine the beans, rice, scallions, tomatoes,
cucumber, and, if desired, jalapeno. Blend in the oil, lime juice,
cilantro, and seasonings. Chill for 1 hour before serving.
TIP: For a slight twist, add 2 roasted, seeded, and c Rice and bean casserole Mix the beans, rice and tomato paste. Blend the garlic, onion, milk and
soy sauce. Combine everything but sesame seeds into a baking dish. Shake

ABOUT THE GREENS: The recipe calls for collard greens, but you can also use escar Greek bean dip In a blender or food processor, puree the Lima beans, garlic, lemon juice, dill,
and mint. If needed, add about 1/4 cup of the reserved bean liquid to aid in
pureeing. Add the olive oil and process until smooth and creamy. Fold in the

2 quart casserole. Add 1 cup cheese. Pour milk over beans, top with
remaining cheese. Bake uncovered for 30 minutes until sauce is thickened

mixture should be thick. Chill, covered, for at least 1 hour. Garnish

cups of water with the bay leaf and garlic.
Drain the beans, but reserve the liquid in case it is needed later
to thin the filling mixture.

Cuban black bean chili Cook beans until soft, about 2 hours. Drain off water. Coat bottom of large
saucepan lightly with oil and saute onion and pepper until soft. Add
tomatoes, spices and beans, then cover with water. Stir in cilantro,
vinegar and hot sauce. Simmer for 1 Chili ( black bean with toasted spice seasoning ) Drain beans. Place in a large pot & add 8 c water. Bring to a boil.
Add peppers, ginger, bay leaf & 1/2 c cilantro. Cover & simmer for 1
1/2 to 2 hours. Remove from heat & discard bay leaf.

oil until the onion is soft. Add the beans, bouillon, rosemary and water.

White bean soup In a large saucepan, warm oil over medium heat and sauté onion, carrots, celery, and garlic, stirring occasionally, for about 5 minutes or until tender.
Stir in beans and herb soup mix blended with water. Bring the mixture to a boil over high heat. Reduce Black bean cakes with potato-pepper sauce Divide the cooked beans into 2 equal parts. Place one portion in a heavy
saucepan and add 1/2 cup reserved cooking liquid. Cook over medium heat
until the beans can be mashed into a paste with a fork, a
bout 30 minutes;

minutes. Turn into an oiled casserole dish and bake for 40 minutes.

pouring ingredients into ajar and shaking vigorously or mixing in a
blender. Mix thoroughly with vegetables, beans and herbs. Marinate in
refrigerator for 4 hours or longer. desir Mediterranean bean salad with cheese 1. Rinse, dry and chop spinach, tomato and bell pepper.

3. Rinse and drain kidney beans and chickpeas in colander.
4. Combine all ingredients in a large salad bowl.

Heat the oil in a large pot over medium heat.

Cook uncovered over med low heat, stirring occasionally, until beans are
tender, about 1 1/2 hours. Drain, reserve 3c cooking liquid.
In another large saucepan, heat oil. Ad White bean salad with grilled shiitake, shallots and smoked sturgeon Mix the cook beans with the shallots, the mustard and the olive oil, make sure that the dressing just coats the beans but that it is not runny. Season the shiitake caps and grill them, until tender. Mix 1/2 of the sturgeon with some of the bean salad and Black bean succotash Soak beans for at least 3 hours in water. Cook in medium saucepan with a generous amount of salted water.
Add garlic clove and halved jalapeno pepper, cook until tender and drain.
