Ingredients:
2 Pound(s) red new potatoes,washed
1/4 Cup(s) fresh lemon juice
1 1/2 Teaspoon(s) oregano
1/2 Teaspoon(s) crushed dried basil
1 Teaspoon(s) grated lemon rind
1/2 salt
1/4 Teaspoon(s) pepper
8 Tablespoon(s) olive oil
10 small dried bay leaves
Directions: Preheat oven to 375 degrees. Butter a 13 x 9-inch baking dish. Set aside. Quarter new potatoes; place in prepared baking dish. In a small bowl combine lemon juice, oregano, basil, lemon rind, salt and pepper. Gradually whisk in oil. Pour oil mixture over potatoes and toss to coat. Add bay leaves. Place baking dish in center of oven. Cook potatoes turning several times, until golden brown and tender. Should bake approximately 40 to 50 minutes. Remove and discard bay leaves; serve immediately or at room temperature.
