Directions: Choose pot barley when possible because it is higher in fiber.
They take the same length to cook. May be prepared a day in advance
for a buffet and refrigerated. Reheat, covered in 350F oven for 30
min.
Serve as an alternative to rice or potatoes. Vary by adding chopped
almonds, celery or green onion, fresh dill, thyme or basil.
In nonstick skillet, melt margarine over medium heat; add onion and
cook for about 2 min or until softened. Add mushrooms and cook,
stirring occasionally for 5 min.
Transfer mixture to 11x7" baking dish; add barkey and chicken stock.
Bake, covered, in 350F oven for 1 hour; uncover and bake for 10 min
longer. OR bake in 325F oven for 1 1/2 hours. Stir in parsley and
pepper to taste. Makes 8 servings, 2/3 cup.

Simmer for 20-25 minutes. Remove bay leaf and serve.

fingertips until mixture forms coarse meal. Mix in enough water by Tbsp to
form moist clumps. Gather dough into ball, flatten into disk. Wrap in
plastic and chill until firm, ab Pot roast of turkey with barley HEAT THE OIL in a large Dutch oven or roasting pan and add the turkey, skin
side down. Cook over high heat until skin is golden, about 7 minutes.
Remove the turkey and pour off the oil. Replace the pot on the stove and

Stir in the shallots, garlic, and celery and saute for 30 seconds. Season with salt and pepper. Wild mushroom lasagne with mushroom jus Prepare all wild mushrooms by trimming off stalks and cutting into four pieces. Peel celeriac and slice thinly to represent lasagne pasta sheets. Fry shallots and garlic in 1oz of butter. Add mushrooms, season with salt, pepper and cook until they are sof Chuck's barley-mushroom winter borscht (vegan or lacto) Saute the garlic and onion in olive oil on medium heat until the onions are translucent. Combine the barley, lima beans, split peas, lentils, miso, and water with the onion/garlic, and bring to a boil. Add the turnips and carrots, reduce heat to medium-lo Barbecued duck and wild mushroom quesadilla (gc) Put legs in a casserole and brush on sauce. Pour stock around legs. Wild mushroom and salsify phyllo purse with tarragon jus In a large saute pan saute sprayed with a non-stick spray, add garlic and shallots and cook for 30 seconds to 1 minute.
Add all the sliced mushrooms and saute for an additional 2 to 3 minutes or until there is no liquid in the bottom of the pan. Deglaze t Dad's mushroom masterpiece 1-2 cups of water are needed to steam the fillets, depending on the pan
used. For each cup, add 1 tablespoon of salt and stir. Steam the fillets
for 9-10 minutes oruntil they flake easily when tested with a fork.

Stir in 1 can of the broth; cook 4 minutes, stirring constantly. Gradually stir in remaining can of Bulgur pilaf with apricots and raisins In nonstick skillet, melt margarine over medium heat. Cook onion, stirring
until softened. Stir in bulgur and cook, stirring for 1 minute.
Stir in raisins, apricot and stock; cover and simmer over low heat for 15
min or until liquid is absorbed. St Mushroom soup In large pot combine brot
h, soy sauce, ginger, garlic, mushrooms, cabbage, carrots, and chicken. Cover, Bring to a boil; simmer until mushrooms are soft, about 5 minutes. Stir in noodles, green onions and spinach simmer until greens Pilaf with sour cherries and lentils In a 4-5 quart Dutch oven, melt most of the butter and slowly brown the
onions. Add the cleaned lentils and fry a bit; then the same for the
cleaned rice. Stir constantly, browning the rice without letting it stick.
Add the cherries and about Baked barley and bean casserole Preheat oven to 350 F. Mix all ingredients together. Let stand for 30
minutes. Turn into an oiled casserole dish and bake for 40 minutes.

Reprinted by permission of Arrowhead Mills, Broccoli mushroom casserole Separate broccoli stalks and cook in 1 inch boiling salted water 3 to 5
minutes. Drain. Arrange broccoli in greased 9-inch square pan. Melt 5
tablespoons butter and blend in flour, salt and pepper. Cook and stir until
smooth. Remove from heat and Scotch barley broth Soak green peas overnight and soak barley for 2 hours. Wipe meat and trim
off fat. Put into broth pot with cold water, salt and pepper. Slowly
bring to the boiling point and skim. Add peas, barley and onions and
simmer gently for 2 hours. El paso pilaf In large saucepan, heat oil over medium heat.
Cook onion for 5 minutes oruntil tender but not browned.
Add beans, stock, rice, corn, salsa, lentils, sweet pepper, chili powder and garlic.
Bring to a boil.
Reduce heat, cover and simmer for 20-25 minutes or Chicken mushroom stew (crock pot) 1. Cut chicken into 1 in cube; brown in 1 tbls oil. Transfer to slow cooker
