Asparagus with red pepper sauce Peel the asparagus if necessary and cook the stalks in lightly salted
water for 4 to 8 minutes, depending on thickness, or until fork
tender but stiil firm. Drain under cold water and set the stalks
aside. Broil the peppers on all sides until l Caribbean jerk sauce Mix the spices, salt, sugar and thyme in a bowl. Add the vinegar, soy and
orange juice. Beat well. Slowly add the oil as you continue to beat, to
emulsify the mixture. Blend in the remaining ingredients. Refrigerate 1
