4 sprigs thyme
3 tomatoes; peeled, seeded, chopped
1/2 Cup(s) green olives; coarsely chopped
1/4 Teaspoon(s) crushed red pepper flakes
2 clove garlic; minced
1/2 Cup(s) red onion; finely chopped
1/16 Cup(s) lime juice (fresh)
Directions: Preheat the oven to 400F . Oil lightly a shallow baking dish large enough to hold the fillets in one layer. In a bowl stir together the oil, thyme, tomatoes, olives, crushed red pepper, garlic, onion and lime juice. In the prepared dish arrange the fillets skin side down, season them with salt and spoon tomato mixture over them.
