Ingredients:
1 1/2 Cup(s) All-Purpose Flour
1/2 Cup(s) Cornmeal
2 Tablespoon(s) Sugar
2 Teaspoon(s) Baking Powder
1/4 Teaspoon(s) Baking Soda
1/4 Teaspoon(s) Salt
1 Beaten Egg
1 Cup(s) Buttermilk
1/3 Cup(s) Vegetable Oil
5 Slice(s) Bacon, crumbled
Directions: Grease twelve muffin cups; set aside. In a mixing bowl combine flour, cornmeal, sugar, baking powder, baking soda, and salt. Make a well in the center of the dry mixture; set aside. In another bowl combine egg, buttermilk, and oil; add all at once to dry mixture in the well in the center. Stir until just moistened (batter should be lumpy). Fold in bacon. Spoon batter into the prepared muffin cups, filling each 2/3 full. Bake at 400F degrees for 18 to 20 minutes or until golden. Cool on a wire rack for 5 minutes. Remove from muffin cups.
