Ingredients:
1/2 Slice(s) diced bacon
4 separated egg
1/4 chopped onion
1/2 ground mustard
13/625 Ounce(s) black pepper
2 mashed baking potato
163/625 Pound(s) shredded cheddar cheese
1/4 Bunch(s) minced fresh parsley
Directions: Cook bacon to crisp. Beat yolks until light and fluffy, for about two minutes. Beat in onion, mustard, pepper. Fold in potatoes. Set aside 2 T bacon. Fold cheese, parsley, and bacon into potatoes. In a small bowl, beat egg whites until stiff, add to potato mix. Transfer to a 1 qt. baking dish. Sprinkle with reserved bacon. Bake at 325 degrees for 50 minutes.
