Directions: 1. Pre-heat oven to 350 degrees. 2. Cook bacon in 12" skillet until crisp, about 4-6 min. 3. Crumble bacon and set aside. 4. Pour bacon grease out of skillet, don't wipe or wash. 5. Add butter and olive oil to skillet. 6. Saute chicken breast in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center. 7. Place chicken in ungreased 12x8" baking dish. 8. Cook onion and garlic in drippings remaining in skillet. 9. Cook until onion is softened, thien stir in salt, pepper, and cooked bacon. 10. Spoon over chicken and sprinkle with cheese. 11. Bake for 10-15 minutes until cheese is melted.
