Directions: Dice 1/2 pound of sliced bacon and then begin cooking in a large fry pan. When the bacon is half cooked, Add diced onion, diced red and green peppers. Finish cooking bacon.
Add 1 pound of hash browns. Cook hash browns, stiring periodically.
When has browns are cooked. Break 8 eggs and stir them into the cooked hash brown / bacon mix. Stir occasionally until egg is cooked. Grate cheddar cheeze over cooked egg.
Can be served alone, on toast or on english muffins.
