Directions: The North American Indians made patties of black beans and cornmeal,
cooking them over campfires. Brown rice has been added to give them more
substance, though the Native Americans on the plains would have used wild
rice. For a main dish, you can make or buy a mushroom gravy to serve over
the patties, serving with a green vegetable and salad. Uncooked patties
can be wrapped in wax paper and frozen, then for a quick meal you can
defrost and fry or grill. This is a nice way to use up leftover rice or
beans, but you can also cook some for the occasion. For breakfast, you can
serve with warm maple syrup.
Cool the beans and rice, if you have just cooked them. Combine all the
ingredients well. Add more cornmeal as needed to form a stiff dough. Form
into patties. Add corn oil to a frying pan and fry, or grill over
charcoal. Cooking black beans: put 1 cup dry black beans in 3 cups water
and store overnight (a quart canning jar works well for this.) Bring to
a boil in fresh water and simmer around 40 minutes. Cooking brown
rice: place 1 cup brown rice in 2 1/2 cups water. Bring to a boil, then
cover and simmer until water has disappeared, about 35 minutes. Let the

degrees for 25 minutes. Top casserole with remaining chow mein noodles and

Black bean relish * Black beans should be canned and they should be rinsed and
drained. ** Serrano chile should be seeded and finely chopped.

Bunny's black beans and dirty rice soup Saute the veggies in the cup chicken broth til soft in a pressure cooker.
Toss all remaining ingredients in the pot stir lock lid in place bring up
to high pressure level out and cook for 12 min. Release pressure an let sit
closed for 5 min.
Cannellini bean salad Mince red onion to give 1 tablespoon
Peel, seed, and dice 2 medium cucumbers

Electronic form White bean and pepper salad 1. Stir together lemon juice, olive oil, sugar, dill weed (or crushed fennel seed), pepper, and garlic in a medium mixing bowl.
2. Add beans, green or sweet red pepper, cucumber, and green onions. Toss to coat. Cover and refrigerate for 2 to 24 hours. I've seen the lima bean light Saute onion and garlic in olive oil. Add the remaining ingredients, cover with water, bring to a boil, then reduce to a simmer (covered).
Cook this until beans are tender - about 1 1/2 hours. Be careful to add water as needed. Chop 1/2 bunch of fresh pars Spicy sausage patties 1. In a food processor, place all of the ingredients except the
turkey, and process until smooth. Scrape the mixture into a
medium-size bowl. Add the turkey and combine well with your hands
until the spice mixture is evenly distributed. Cover and refr Apple and bean slaw At least 20 minutes before serving or a day ahead, for garnish remove 6-8
outer leaves of cabbage and reserve. Shred 2 cups of cabbage from sm. head.
In large bowl, stir mayonnaise, catsup, lemon juice and salt. Add cabbage,

Black beans & corn thermos lunch A favorite one pot meal that you can take to work in a thermos is 1/2 c black beans (dehydrated or canned); 1/2 canned corn (rinsed) or cooked frozen corn; 1/2 cooked brown rice; and enough salsa to blend the mixture together. Green bean salad with fresh tomato chutney Cook beans in large pot of boiling salted water until crisp-tender, about 6
minutes. Drain; rinse with cold water and drain again. Pat dry. (Beans can
be made 1 day ahead. Wrap in paper towels and store in resealable plastic
bags; refrigerate.)

potatoes st Garbanzo bean soup Heat the oil in a large saucepan. Add the leeks and zucchini and cook briskly for 5
minutes, stirring constantly.Add the garlic, tomatoes, tomato paste, bay leaf, stock, and
garbanzo beans. Bring to a boil and simmer for 5 minutes. Shred the spinach Bean bonanza Mix vinegar, oil, sugar, salt and pepper; mix in beans, green pepper and
onion. Cover and refrigerate at least 8 hours. Just before serving, remove
to salad bowl with slotted spoon.
Italian white bean salad Combine all ingredients and toss well.
Refrigerate for several hours before serving.
