Directions: " This is a vegetarian version of a Bedouin dish. If you serve it with
rice, try adding saffron or tumeric to the rice before cooking. It adds a
distinctive flavor as well as color, creating 'red' rice."
Peel the onions and place them in a large pan of boiling water. Reduce
the heat and let them simmer for 15-20 minutes, covered, until they are
fairly tender. When they are ready, take them out and set aside to cool.
Now remove the centre section of each onion, to leave a shell about 3/4
inch thick.
In a bowl, mix together the lentils, pepper, salt, yogurt, dates,
walnuts, raisins or sultanas and bread crumbs.
Fill the onions with this mixture. Keep any that remains and mix it with
the chopped discarded onion centres.
Place the filled onions in an oven proof dish, spoon any remaining
mixture around them and cook for about 20 minutes. Garnish with parsley
ands serve with bulgur or 'red' rice (see note above).

Almond oatmeal with cottage cheese, fruit cocktail and milk 1. Cook oatmeal according to package directions to ensure proper consistency.
2. Stir in wheat germ and almonds.
3. Serve with cottage cheese, fruit cocktail and milk.
Note: If desired and if given in meal, milk may be used instead of water

Herbed spiced nuts Toss all ingredients together. Bake 350F for 10 minutes.

Glazed nuts Toast nuts in 350F oven for 10-15 minutes until golden.
Combine rest of ingredients in a sauce pan and simmer until thickened.
Glaze toasted nuts with sauce. Cool on silpat. Break apart.
Store in airtight container.

24-hour fruit salad Drain pineapple and dissolve orange juice in pineapple juice. Mix in juice instant pudding, sliced bananas, pears, apricots and peaches (in bite sizes.) Add drained oranges and pineapple. Mix and let stand for 24 hours in refrigerator.
Skewered fruit Cut fruit (not berries) into 1/2 inch pieces; place on skewers. Brush with
butter; grill 6 minutes on high, until lightly browned. In cup, mix sugar
and cardamom; sprinkle over fruits. Serve with berries.
Creamed onions Peel the onions. Parboil in about 3/4 cup water. (I do this part
in a covered casserole in the microwave). Make white sauce with
rest of ingredients. If you like a stronger onion flavor, thin the
white sauce with part or all of the onion water. Other Chicken and fruit kabobs with mustard-leek sauce Cut chicken into 1-inch pieces; cut each piece of fruit into 8 pieces.
Thread chickenand fruit onto 16 small wood or metal skewers; spray with
cooking spray and sprinkly lightly with curry powder.
