1 Tablespoon(s) cajun seasoning
13/625 Ounce(s) salt
1/12 Ounce(s) black pepper
1/8 Quart(s) mayonnaise
4 Tablespoon(s) drained relish, sweet pickle
1 medium yellow onion
1 1/4 Pound(s) large (approx. 3-4) chicken breast
Directions: Boil the chicken breasts in water until they are cooked thoroughly. Remove breasts from pot and cool on plate until they are easy to handle and cut. Chop up the chicken being very careful to remove all ligaments and grissle. Add onion, sweet pickle relish, black pepper, salt, Cajun seasoning to chopped chicken. Mix in mayonnaise. (Note: you can add the mayonnaise at ? cup at a time to make sure it is not too much) Add more Cajun Seasoning for a spicier taste. TIP: Use Luzianne for the Cajun Seasoning. BE CAREFUL WITH OTHER BRANDS AS THEY TEND TO BE REALLY SALTY. Serve on toasted bread with lettuce and tomato, as desired. Garnish with bread & butter pickles.
