1 garlic clove; finely chopped
3 chicken breasts; boneless, skinless, cut in halves
2 medium red onions; finely chopped about 1 1/2 cups

2 Tablespoon(s) cilantro; chopped fresh
1/4 Teaspoon(s) cayenne pepper

Directions: CHICKEN: Mix all ingredients except chicken in shallow glass bowl or dish. Add chicken; turn to coat with marinade. Cover and refrigerate 2-4 hours. Meanwhile, prepare salsa. Remove chicken from marinade; reserve marinade. Cover and grill chicken 4-6 inches from medium coals for 15-20 minutes, brushing with marinade and turning occasionally, until juice of chicken is no longer pink when centers of thickest parts are cut. Discard any remaining marinade. Serve with Red Onion Salsa and Spicy Rice with Vegetables. RED ONION SALSA: Mix all ingredients in galss or plastic bowl.
