Lentil, garbanzo bean and tomato salad Combine 2-1/2 cups water, lentils, diced carrots, and bay leaf in
heavy medium saucepan. Bring to boil. Reduce heat, cover and simmer
until lentils are just tender, about 25 minutes. Drain; transfer to
large bowl. Cool.
Mix all remaining Bean salad Mix well. Add sugar, oil and vinegar to taste.
The longer it sits, the better it tastes.
Mexican hot bean dip Mix first six ingredients and place in a 9 X 13-inch casserole dish. Top
with shredded Monterey Jack and cheddar cheese to about 1/2 in thickness. Bake at
350 degrees for 15 to 20 minutes, until bubbly. Serve hot with tortilla
chips.
Cuban black bean and rice salad In a large mixing bowl, combine the beans, rice, scallions, tomatoes,
