Directions: Preheat the oven to 400 F. Place the apple juice, couscous, raisins and spice in a pan and bring to a boil, stirring. Cover and simmer for 10-12 minutes, until all the liquid is absorbed. Spoon half the couscous mixture into a 5-cup ovenproof dish and top with half the apple slices. Top with the remaining couscous. Arrange the remaining apple slices to overlap on the top and sprinkle with sugar substitute. Bake for 25-30 minutes, or until the apples are golden brown. Serve hot with yogurt.
