Directions: Remove the shells from the hard boiled eggs and separate the yolks from the whites. Arrange the whites on a serving plate and remove one or two that are damaged or less pretty than the rest. There will be more filling to go around with fewer whites and this is a chance to make the presentation nicer. Put the yolks in a medium mixing bowl and add the mayonnaise, vinegar, salt, pepper, half the paprika and one tablespoon of the chives, and the mustard. Mix together until well combined, taste, and adjust flavorings to suite you. Spoon the yolk mixture into the egg whites. Garnish with the extra paprika and chives and serve cold.
