Directions: Clean the artichokes: remove the external leaves and cut off the stem. Cut
off the top leaves with a sharp knife, too. Put the clean artichokes in a
bowl with cold water, to avoid that they become black. In another bowl,
boil water and add the drained artichokes one by one, to avoid that the
water stop boiling. In the meantime, fry the chopped onion in a pan with
oil, the chopped garlic cloves and the sliced bacon or ham. When they
become golden, remove the pan from fire and add the flour. Drain the bowled
artichokes and add to the onion sauce. Serve hot.

Note: To make hot oil, place a handful of dried red peppers in a
bowl. Pour hot oil over & let sit. This will keep for several weeks.
When needed, use the oil & not the peppers.
Garlic, ginger & Texas wiener sauce 1 lb ground beef---browned and drained
2 tsp chili powder
2 tsp cumin powder
3 tsp paprika
1 Tbs minced onions
1 tst oregano
salt, pepper and ketchup to taste
Combine all ingredients and cook until hot.... Hot chile sauce * You should use 6 to 8 dried Cascabel chilies in this recipe. If
they
can't be found, then use a 1/2 of a medium Ancho Chile. But the
result
will not be as hot.

paste.
Add tomatoes & process just a few seconds longer. Transfer to a bowl &
stir in parmesan, salt & nuts.

Worcestershire Sauce and Vinegar. Begin cooking over low heat.

to room temperature before serving.

White sauce Melt butter. Whisk in flour and cook a minute. Slowly add milk, whisking vigorously. Simmer for a few minutes or until thick and smooth. Season to taste with salt and pepper. Cool to room temperature, with buttered paper over top to prevent a skin from fo Pilze in sahnesosse (mushrooms in cream sauce) Clean mushrooms and slice in half if large. Pat dry. Fry bacon in a
large pan until lightly browned. Remove from pan and reserve. Add the
butter to the pan drippings. Add onions; saute until lightly browned.
Add mushrooms; cook until tender, stirring Hot salsa Put all but cornstarch liquid in 8 quart pot and bring to a boil,
boil slow 20 minutes. Slowly add cornstarch liquid. Boil 10 minutes.
Put in jars and process 15 minutes or freeze. Makes about 13 pints.
Shrimp and mushroom linguini with creamy cheese herb sauce 1. Saute mushrooms in a little butter or margarine until tender and cooked.
2. Cook linguini according to package directions and drain.
3. In a saute pan melt the butter or margarine with the garlic. Stir in the cream cheese breaking it up with a spoon as Cheese sauce ~ without the cheese ~combine nutritional yeast, flour, arrowroot and salt,
~add wather and oil while mixing contents together thoroughly
~keep whisking over medium to hight heat until the mixture thickens and begings to bubble slightly.
~Stir in the mustard and heat for anot 3 minute bbq sauce In a bowl, stir together all ingredients. Brush on meats or poultry during
last 20 minutes of grilling, turning frequently. Makes 1 1/2 cups.

7 tb olive oil
1 md onion, chopped
2 cloves garlic, crushed
3 medium-sized ripe tomatoes peeled and seeded
1-2 long fresh red chilli peppers, seeded
4 t Hungarian pork in paprika-dill sauce Cut port into pieces about 4" x 5". (actually size is not important) Mix flour with salt and pepper on sheet of waxed paper. Dredge pork in flour. Serve with anything...very good with grilled fish, grilled chicken,
as a party dip, and even as a sandiwch spread for grilled pork or
