Directions: 1. Combine first 5 ingredients in a large shallow dish, add fish, turning
to coat. Cover and marinate in refrigerator 1 hour, turning fish occasionally.
2. Preheat broiler. Remove fish from dish, discarding marinade. Brush oil over
fish, sprinkle with pepper Place fish on broiler pan coated with cooking spray,
broil 4 minutes or until medium-rare (do not turn). Garnish with lime slices,
if desired.
Yield: 4 servings (serving size: 1 steak).

Place margarine in a 1 1/2 quart saucepan. Melt over moderate heat. Add
celery and mushrooms and cook, stirring occasionally, over moderate heat
until celery is limp. Add Adobo de achiote THE SPICE GRINDER METHOD: In a spice grinder, pulverize the achiote as
finely as possible, then dump it into a small bowl. Pulverize the allspice
and black pepper (if you're using whole) along with the oregano, and add to
the achiote. Sprinkl Adobo (mexican smoked chile marinade) This spicy marinade owes its unusual flavor to the chipotle, a smoked
jalapeno chile. Chipotles are usually sold canned in tomato paste. Look
for them at Mexican and Latin American markets. Adobo marinade goes
particularly well with pork.
Juice Pasta con tonno / pasta with tuna 1. Make pasta al-dente. while the pasta is cooking, make the sauce.
2. Add garlic to the olive oil in a frying pan, some chili pepper to taste, tuna, and tomatoes. Add salt, bring to boil.
3. Mix with pasta, sprinkle with cilantro or parsley.

Seared tuna with tomatoes and basil In a 12 inch skillet, heat 1 1/2 T oil over medium high heat. Season tuna
generously with salt and pepper. Arrange half of tuna in skillet in a
single layer to prevent crowding. Cook, turning once, until golden brown
