Directions: Cover chiles with hot water, let sit for 15 min. Combine chiles, and 1/4 to
1/2 cup of the water they were soaking in, onion, garlic, oregano and cumin
in a blender and puree. Saute the mixture in oil for 5 min add vinegar and
sugar and bring to a boil. Reduce heat, simmer until thick about 5-8 min.

Simple tomato sauce Heat oil with garlic in medium saucepan over medium heat.
When garlic starts to sizzle, add tomatoes, basil, and salt and pepper to taste.
Simmer until sauce thickens slightly, 15 to 20 minutes.
Add meatballs to tomato sauce and heat through for several m Lime, tequila and sour cream sauce Combine ingredients in a small saucepan. Bring to a boil over medium heat while whisking. food processor and process briefly until everything is the texture of fine
