Adobo de achiote THE SPICE GRINDER METHOD: In a spice grinder, pulverize the achiote as
finely as possible, then dump it into a small bowl. Pulverize the allspice
and black pepper (if you're using whole) along with the oregano, and add to
the achiote. Sprinkl Spicy steak marinade Combine all ingredients. Use to marinate any steak for about an hour. Use
marinade to baste beef while cooking. Serve garnished with olives if
desired.
Chinese dry marinade Combine ingredients and use for marinade for spare ribs and pork.
Alan's jerk marinade Put all ingredients except the scallions and thyme in a blender (or food
processor) and puree. Then add the remaining ingredients and run the
blender until the ingredients are well mixed, but not pureed.

Heat wine and cherry juice to simmering; add jelly and stir until melted.
Remove from heat and add Chicken chipotle adobo This dish is so easy to prepare and if you enjoy the smoky flavor of
Chipotle Chiles and Adobo sauce it ranks high.
I use an Adobo sauce that is available commercially and comes in a
concentrated paste that is reconstituted with water to measure two
cups. Lemon marinade. 15 ml 1 tbsp sunflower oil. 1 Clove garlic, crushed. Juice of half a lemon.
Ground black pepper. 30 ml 2 tbsp chopped fresh herbs, or 2,5 ml half tsp
dried mixed herbs.
Mix all ingredients together. Leave to marinade for at least half an hour.
Miso marinade Combine all ingredients and use as a marinade for fish or vegetables.
Garlic beef stir fry marinade and sauce Trim steak of fat, slice diagonally across grain into thin strips. Marinade in sherry, soy sauce, garlic, red pepper, onion and ginger.

Adobo sauce [if i understand my chiles] Cover chiles with hot water, let sit for 15 min. Combine chiles, and 1/4 to
1/2 cup of the water they were soaking in, onion, garlic, oregano and cumin
in a blender and puree. Saute the mixture in oil for 5 min add vinegar and
sugar and bring to a Fresh herb and garlic marinade Whisk together ingredients in a nonreactive dish. Arrange meat in dish;
rub with marinade. Cover; refrigerate for length of time specified in
"Marinating Times" recipe, turning meat occasionally.
Remove meat from refrigerator; let it come to a Spicy marinade for shrimp Combine all ingredients and marinate shrimp for 30 minutes. Thread 3 shrimp
onto a water-soaked bamboo skewer and grill 2 to 3 minutes per side.
All purpose marinade Mix all ingredients together. Marinate the meat (beef, pork, chicken, or
game) for 3 to 6 hours, then use the marinade as a basting sauce as the

Coconut chili marinade *1 cup cream of coconut can be substituted for 1 cup unsweetened coconut
milk.
