Apple and cider jelly 1. roughly chop the apples(including the skin and core) and put them in a
large heatproof bowl add the cider and lemon rind, then partially cover the
bowl with microwave clingfilm. microwave on high for 10-12 minutes until
the apples are soft, sti Apfelschaum (apple mousse) In the wine, stew the apples until tender and mushy. Force through a sieve.
Add the sugar and lemon peel. Meanwhile, beat the egg whites to stiff peaks
and then carefully fold into the apple mixture. Fill the whole into a
buttered ovenproof dish ( Ann cooper's apple pancakes with maple pecan butter Make Maple Pecan Butter. In small mixer bowl, beat butter on medium
speed until light. Add pecans, mix well. Gradually beat in syrup. Set
aside while making pancakes.
