Acapulco Jicama Salad



Ingredients:
1/4 Cup(s) Cilantro
1 Lime, juice of
2 Tablespoon(s) White wine vinegar
2 Tablespoon(s) Oil
1/2 Teaspoon(s) Kosher salt
1/4 Teaspoon(s) Pepper
3 Oranges
1 Avocado
1 small Jicama
18 Red-leaf lettuce leaves
Directions: 1. Mince cilantro. Whisk together cilantro, lime juice, vinegar, oil, salt, and pepper. 2. Peel oranges, and slice into 1/4-inch-thick circles. Peel and pit avocado, slice into 1-inch cubes. Peel jicama and slice into 1/2-inch cubes. 3. Marinate orange slices, avocado, and jicama in lime-cilantro vinaigrette for 30 minutes. 4. Wash, spin dry, and tear lettuce into bite-sized pieces. Arrange lettuce on chilled salad plates. Remove orange, avocado, and jicama from marinade and place on lettuce. Serves 6.
