Asparagus with red pepper sauce Peel the asparagus if necessary and cook the stalks in lightly salted
water for 4 to 8 minutes, depending on thickness, or until fork
tender but stiil firm. Drain under cold water and set the stalks
aside. Broil the peppers on all sides until l Tamarind chicken in white curry sauce Soak the tamarind in 3/4 cup boiling water for 2 hours. Mash the tamarind and then strain. Throw away the pulp and reserve the juice.
Roast the chopped chile, then remove.

pan of boiling salted water. Boil gently until
cooked--bright green and tender--but still firm, about

until combined. Heat until hot but not boiling. Remove from flame and
immediately stir in slightly beaten egg yolk and cheese.
