In a large pot, saute onions in olive oil on medium-high, stirring often, until translucent and soft, about 5 minutes. Stir in garlic and saute for 2 to 3 minutes. dishes, serve any or all of the following for diners to add to their
soup:
~Chopped fresh chiles Fricot a la "belette" ("weasel" fricot/soup) "If there was one dish that could be called typically Acadian, it would
certainly be Fricot, a soup containing potatoes and meat. The dish has
been a long time favorite in Acadian households, so much that the word
fricot was once synomous Bean bonanza Mix vinegar, oil, sugar, salt and pepper; mix in beans, green pepper and
onion. Cover and refrigerate at least 8 hours. Just before serving, remove
to salad bowl with slotted spoon.
White onion soup (irish) Heat the butter, and when foaming add the onions and cloves. Let the
onions soften, but not color at all. Sprinkle over the flour, mix well
and cook, stirring, for about 1 minute; then add the nutmeg, the bay leaf

pour into a saucepan.
Add mushrooms, broth mix, water, chives, paprika, pepper and nutmeg.
Heat, stirring, over low heat until boiling.

1. Split casing on sausages, remove meat and discard casing.
2. Brown sausage, garlic and onion in Dutch oven, over meduim heat until sausage is done.
3. Stir frequently to break sausage apart; drain.
4. Stir in toma Fava bean and pecorino crostini Bring a medium pot of water to a boil and add the fava beans. Boil for 5
minutes, then drain, and rinse under cold water. Using your fingers, peel
the outer skin off the beans and discard. Separate 3 T of fava beans and
set them aside.
Place the remai Armenian lentil soup Saute onion, carrots, celery, eggplant, green pepper and garlic in oil until lightly browned. Add remaining ingredients except parsley and mint and simmer until lentils are tender. Add parsley and mint. Adjust seasonings to your taste. Bon Appetit!
Italian minestrone soup In a large pot, place the meat, water, salt, small onion, celery leaves and bay leaf. Cover and simmer for about 2-1/2 hours until the meat is tender. Remove the meat.

boil over high heat. Reduce heat to medium-high and broil 10 minutes
or until potatoes are tender.
While potatoes are cooking, place bacon in microwaveable container.
Cover Flylady vegetable soup In a large soup pot, heat the one tablespoon of the olive oil over medium high heat. Add the onion and cook till nearly translucent, now add the garlic. Don't let the garlic brown and saute another couple of minutes.
Add the rest of the chopped veggi Elegant mushroom soup Melt butter, saute garlic and green onions, but do not brown. Stir in
flour and chicken stock; bring to a boil and cook 2 minutes. Pour mixture
into a food processor or blender. Add mushrooms and process until smooth.

all at once!) in a blender, using as much tomato juice as necessary to aid
the process. Combine with tomatoes, salsa and herbs, and cook about 15 or

Potato-barley soup SAUTE THE ONION, CELERY and garlic in oil until the vegetables become
translucent. Add the stock, barley and carrots. Simmer gently, stirring
occasionally, about 2 hours. Add the potatoes after the soup has cooked 1
hour. If the soup gets too t Cock-a-leekie (chicken and leek soup) Heat all ingredients except leeks to boiling in Dutch oven. Reduce
heat. Cover and simmer 30 minutes. Add leeks. Heat to boiling;
reduce heat. Cover and simmer until thickest pieces of chicken are
done, about 15 minutes. Remove chicken from Turkey-stuffing soup Combine turkey carcass, water, carrots, celery, onion, parsley, bay
leaf, thyme, stuffing, gravy and salt in soup pot. Place over medium heat
and bring to boil, then reduce heat to simmer. Stir and break up all
clumps of stuffing. Simmer, covered, abou Shiitake, beef and barley soup Place mushrooms in bowl; pour hot water over to cover. Let stand until
mushrooms are soft, about 30 minutes. Drain. Cut off stems; discard.
Slice mushroom caps; transfer to 6-quart slow cooker.
