Directions: In large nonstick skillet or paella pan, heat oil over medium heat; cook
onion, garlic, rice and turmeric for 4 minutes or until onion is softened.
Stir in stock, salt and pepper; bring to boil. Reduce heat, cover and
simmer for 10 minutes.
Meanwhile, cut green and red peppers in half lengthwise; remove core and
membranes. Cut in half crosswise; cut lengthwise into strips. Core and chop
tomatoes. Stir peppers and tomatoes into pan; cook, covered, for 15 minutes
or until rice is almost tender.
Stir in corn; cook, covered for about 5 minutes or until liquid has
evaporated.
Garnish with parsley.
Serve with a crusty roll and crunchy-crisp marinated salad.

If I were having my teeth out again, I'd have soup. I think it's
comforting, and it's definitely easy to eat! My favorite is Jackie Manni Un stuffed bell pepper soup (vegan) This soup much resembles the flavor or a stuffed bell
pepper that has indeed come unstuffed. In a 5-6 qt pot
bring to boil water, rice onion, & diced bell pepper.
Reduce heat & simmer covered for about 25 min or until
rice is a littl Spicy corn Thaw frozen corn or drain canned corn and set aside. Place the
ground cumin, ground coriander, salt, 1 fresh green chili, and the
onion in a mortar and grind with a pestle to form a smooth paste.
Alternatively, process in a food processor to a smo Albuquerque corn soup Melt butter in a 5-6 qt pan over medium heat. Add corn and garlic, cook,
stirring until corn is hot and darker golden (about 2 min.) Remove from
heat. Whirl broth and 2 c of the corn in a blender or food processor until
