As long as it tastes good I wouldn't worry about the color. If it tastes a little roasty, then you may have scorched some of the extract on the bottom of the pot. Did you add the malt before it started boiling?

Maybe MW's Wheat extract is darker than others. But otherwise I agree with the gang here. Late extract would help and it won't affect the taste at all! You won't be able to get really pale colored beers until you switch to AG. ...

Thanks everybody, I'll try the late extract method next time if you're all confident that adding the majority of the extract that late won't affect the quality of the beer. Taste is still more important to me than color.

I agree, the late extract method would be the best solution to your concerns. The beer will still be a touch darker than you may expect, however if you were to compare it to a standard addition one, you'd see a difference. ...
